Fava, a winter recipe that is loved by the Greek people!
Fava beans are very delicious, and when you make them the traditional Greek way, they are very nutritious and filling, perfect as a meal, or a dip, to be enjoyed with olive oil and good bread!However Fava beans are difficult to cook, they require too much time, and many steps, to this end we have been using yellow split beans also called Fava, the recipe is called Fava even though we use different peas.
Here is the recipe and in this recipe, I use yellow split peas it is easy!
You will need,
2 cups yellow split peas rinsed
¼ cup olive oil
2 cloves garlic
Salt, pepper and a touch of sugar
Vegetable stock or chicken stock
Here is how to make the famous Fava!
In a pot add the oil the chopped onion and garlic, sauté for a few minutes until they become soft, add the peas and season with the seasonings, add the stock making sure it covers the peas and then some.
Cook in moderate heat for 15-20 minutes.
Remove from the heat and purée.
Place on a nice platter and it is ready to use!
As a topping, I like to use sauté onions and mushrooms, in a little butter and olive oil and it is an addition I like. Adding a little olive oil is a must!
If you like to go the Traditional Greek way, for a topping you will use olive oil, chopped onion, oregano, and olives!
A little reminder, Fava is thirsty and loves olive oil, use it with love and don’t hesitate!
Please don’t forget to have nice bread and a glass of wine!

The best time of the day, when you can read them a book and watch them nicely fall asleep, is gone!
Gone and never coming back!
That very special time, just before they fall asleep when you read them something from their favorite book, something happy and positive you reassure them of your love and you make them feel loved and secure!
Preferably no dragons and bad spirits, we want them to have an undisturbed sleep, so they can get a nice rest!
But if you are in that position, when they are still young, don’t overlook the benefits of spending the time just before they sleep to bond with them!
They don’t like to sleep, but they like to talk, and they ask all kinds of questions and here is what you as a parent want, to get to know what is in the heart of the child so you can help them along, with their fears and insecurities!
Not at that moment, but you are aware of what troubles them and at a more appropriate time you will be able to give them the best help because you are the only one that can, you love them more than anyone in the world!
Our world is hostile, our young ones need all the love, and protection we can give them!
Do your best while you still can, #Read them a book! Before they fall asleep!
And remember, It’s not the book, it’s the special #gift you as a parent will enjoy, the company of your child in the perfect surroundings!Priceless!

Shrimp Chowder, a soup that hits the spot on a very cold day!Recipe for two!
Easy to make and so delicious, please double the recipe if you want for more than 2 people!
I love New England for many reasons but the lobster and the chowder are my favorite meals to have when I visit that beautiful part of the US.
I only wish the water of the Atlantic ocean was warmer so we could enjoy swimming, but no, not for me, way too cold!
Here is how I make my Shrimp Chowder and I love it!
You will need,
2 large potatoes diced
1 large onion diced
1 clove garlic chopped
4 slices bacon cut in small pieces
1 tbs butter
2 tbs oil
1 can corn
2 cups chicken broth, vegetable broth or water
½ cup white wine
1 cup cream
1 cup water
1 tbs flour
Salt, pepper, dry thyme and a few red pepper flakes
Here is how to make the shrimp chowder by Litsa!
In a pan put the oil butter, bacon and cook for a few minutes
Add the onion and garlic and sauté until onion is nice and transparent
Deglaze with the wine, cook for a few minutes.
Add the potatoes, corn and chicken broth, cook for about 10 minutes until potatoes are done, over medium heat.
At this point add the shrimp and cook for about 3 minutes.
Season with salt, pepper, dry thyme and red pepper flakes.
Add the cream.
In the cup of water dilute the flour and add to the Shrimp Chowder.
Cook for a few more minutes or until the soup is nice and thick!
Try and adjust seasonings.
Your Shrimp Chowder is ready and it is delicious!
Shrimp with chickpeas
I am looking for easy delicious recipes and this one is exactly that! Creating new recipes is a pleasure, and this one with shrimp and chickpeas is hurty, hits the spot every time!Also delicious and fast!
You will need
1 can chickpeas drained and rinsed
1 red pepper diced
1 yellow pepper diced
1 onion diced
2 cloves garlic
1/4 cup olive oil
1/2 cup white wine
Salt pepper and a touch of sugar
Here is how
In a heavy pan add the oil and sauté the vegetables until transparent
Deglaze with the wine and cook for 3 minutes, add the shrimp and cook a few more minutes until the shrimp changes color, add the chickpeas and season well with salt and pepper! Cook a few more minutes!If you find you need a little more sauce, add a little vegetable broth or a little water!
Your shrimp with chickpeas meal is ready and it didn’t take long!
