Sweet potatoes ala Greek, a delicious way to stuff potatoes with all the Greek elements, like Feta cheese, Greek yogurt, dill and to create something so delicious!

Sweet potatoes are a gift from God with all the nutrients, they are little bullets of happiness, health, and so much more!

Please try to have them on a regular basis, they are so good for you!

Sweet potato Ala Greek-Litsa!

So many ways to stuff sweet potatoes, and here is mine! 

You will need,

2 sweet potatoes

2 tbsp butter

1 cup Feta chunks more if you like 

1 cup Greek yogurt

3 sprigs of dill finely chopped

2 fresh green onions finely chopped

Bacon cooked and cut into little pieces as much as you like

Here is what to do!

Wash the potatoes and dry them well

Pock them with a fork all over

Microwave them for 7 minutes on high

Let them cool and cut them lengthwise but not all the way through!

With a fork loosen the potato and add the butter and a little salt and pepper

Continue with the Feta, yogurt dill and onion and last add the bacon

Be generous, if your potatoes are very big you might need more cheese

Your sweet potatoes ala Greek are ready to compliment your protein, fish, meat, poultry or if you are a vegetarian they are a complete meal!

On a very cold day like today, what do you do!If you are a native Canadian you are happy and you know how to enjoy the day!If you are from another country and from the south, you will spend the day feeling unhappy and you will be dreaming of a warm place in the sun!

For the millions of people that made Canada their home, here is a piece of advice, do your best and enjoy the sun and how brilliant it is today, but don’t let it fool you, it is deadly cold and you better stay inside looking out at the beautiful landscape with the snow pure and fresh like a white blanket,

covering everything as if to protect life from the extreme temperatures!

 The sun today will try to keep us warm but it will not succeed and then again nothing is in vain because our precious sun gives life to everything it touches!

I feel life is good!

I remember my mother was wintering in the house in Greece and every time we spoke on the phone she would brag about the nice weather and how pleasant it was in Greece!

She would say I only need a little light coat when I go out, it’s so nice!

There is nothing that annoyed me about my mother but this did, and I remember once I told her that in Africa it was even warmer ma, please pray that the weather doesn’t turn crazy on us and you get our weather and we get yours!At least we are so well prepared!But some things never change! People this is Canada!
Winters are cold, very cold! Stop complaining about it and start living!

If you can afford it follow the sun if not do your best with the snow and the cold.

There are so many advantages when the snow falls, it is magnificent!The picture changes and its like you are on another part of the planet!It is clean and fresh and it covers all the imperfections!

On a very cold day like today, Start the fireplace!

To have a fireplace with a roaring fire, a good glass of wine and friends that you can have a stimulating conversation with is a gift!

The cold weather brings you closer to the one you love, think about it! Hugs, kisses, love, perfection!

On a very cold day like today, start cooking!

The kitchen is a magic place to be on a day that the snow is falling and you have all the ingredients to create a new meal! The house smells divine and the family that comes in from the cold is so happy to belong to a house that is alive and inviting!

On a cold day like today gather the kids all around you and read them a good book! You will create a memory that will keep them company for a long time! And please don’t let anyone and anything mess with the moment!

It is all a matter of perception! You do the best you can with what you have!

But people will complain about the cold, about the heat, about the rain about the wind!

It is part of life! It makes them happy, they have nothing else to talk about, so the weather is topic of conversation, but never positive always negative!

May you be the one that finds joy where others find sorrow!

Fava-the Greek secret-Litsa

Fava, a winter recipe that is loved by the Greek people!

Fava beans are very delicious, and when you make them the traditional Greek way, they are very nutritious and filling, perfect as a meal, or a dip, to be enjoyed with olive oil and good bread!However Fava beans are difficult to cook, they require too much time, and many steps, to this end we have been using yellow split beans also called Fava, the recipe is called Fava even though we use different peas.

Here is the recipe and in this recipe, I use yellow split peas it is easy!

You will need,

2 cups yellow split peas rinsed

¼ cup olive oil

1 onion

2 cloves garlic

Salt, pepper and a touch of sugar

Vegetable stock or chicken stock

Here is how to make the famous Fava!

In a pot add the oil the chopped onion and garlic, sauté for a few minutes until they become soft, add the peas and season with the seasonings, add the stock making sure it covers the peas and then some.

Cook in moderate heat for 15-20 minutes.

Remove from the heat and purée.

Place on a nice platter and it is ready to use!  

As a topping, I like to use sauté onions and mushrooms, in a little butter and olive oil and it is an addition I like. Adding a little olive oil is a must!

If you like to go the Traditional Greek way, for a topping you will use olive oil, chopped onion, oregano, and olives!

A little reminder, Fava is thirsty and loves olive oil, use it with love and don’t hesitate!

Please don’t forget to have nice bread and a glass of wine!

 

 

 

Before they fall asleep-Litsa!

And then you open your eyes and they are teenagers, and you want to take them in your arms and hug them and kiss them and read them a book but you can’t, game over!Before they fall asleep, where did that time go?

The best time of the day, when you can read them a book and watch them nicely fall asleep, is gone!

Gone and never coming back!

That very special time, just before they fall asleep when you read them something from their favorite book, something happy and positive you reassure them of your love and you make them feel loved and secure! 

Preferably no dragons and bad spirits, we want them to have an undisturbed sleep, so they can get a nice rest!

But if you are in that position, when they are still young, don’t overlook the benefits of spending the time just before they sleep to bond with them!

They don’t like to sleep, but they like to talk, and they ask all kinds of questions and here is what you as a parent want, to get to know what is in the heart of the child so you can help them along, with their fears and insecurities!

Not at that moment, but you are aware of what troubles them and at a more appropriate time you will be able to give them the best help because you are the only one that can, you love them more than anyone in the world!

Our world is hostile, our young ones need all the love, and protection we can give them!

Do your best while you still can, #Read them a book! Before they fall asleep!

And remember, It’s not the book, it’s the special #gift you as a parent will enjoy, the company of your child in the perfect surroundings!Priceless!
