Lentil Avocado salad.One perfect salad
If you love salads, here is a salad you will enjoy year-round!
It can even be a meal if you like lentils. Perfect vegetarian food, packed with all the nutrients we need!
It keeps well in the fridge for up to 4 days and, it gets better when you give it a little time, before serving.
Here is what You will need for one perfect Lentil Avocado salad!
1 cup lentils, place them in plenty of water and cook them for 30 min, drain them and season them with salt and pepper. Place them in a large salad bowl. It will give you 2 1/2 cups of cooked lentils. What lentils to use, I like to use French lentils, they cook fast and they keep their shape!
1 onion diced
1 red pepper 1 yellow pepper diced
1 English cucumber diced
3 fresh onions cut
Dill and mint as much as you like
2 Avocado sliced
1 diced apple.or some grapes, mandarine slices,
Olives as many as you like, Kalamata olives are perfect also.
Cheese like smoked Gouda, or Feta
Dressing for the Lentil Avocado salad!
I like to use my easy-to-go salad dressing, by whipping, olive oil, balsamic vinegar, honey mustard and always have it available. If you have plain mustard just add a little honey and it is just fine! Make sure you always taste your salad before serving. Lentil Avocado salad is a keeper for sure!
It’s a salad you can prepare ahead and have available for lunch, Hopefully, the kids will love it too because it is a change, from the ordinary salads!
