The ingredients for chicken with eggplant in Phyllo!

5 slices of bacon and 1/4 cup olive oil
2 chicken breasts, cubed
1 large onion,3 cloves garlic
1 small container of mushrooms, sliced
1 medium size eggplant, cubed
1 cup tomato sauce
1/2 cup broth, chicken
1 cup Feta cheese, or as much as you like
Salt and pepper, and a touch of sugar
Fresh Mint

One package of fresh Phyllo if it is possible. If not frozen will do! Olive oil from brushing the Phyllo!

Here is how to make your chicken pie with eggplant using Phyllo dough!

In a heavy pan add the oil and cut up bacon, cook for a few minutes
Add the chicken and cook until it has a light golden colour
Add the onions and garlic. Remember that smaller garlic burns easier
Cook a few minutes more, or until the onions become transparent.
Eggplant and mushrooms go in now. along with the tomato

Season with salt and pepper, and add a touch of sugar

Add the broth to the mixture and cook it for a few more minutes. After that, remove it from the heat.

Now add the feta and mint, your mixture is ready to use.

You will need a 9-inch pie plate. Use olive oil to moisten the Phyllo, and make sure you have a thick base, using more Phyllo!

Bake at 350 until nice and golden, about 25-30 minutes!

Your chicken pie with eggplant is ready to be enjoyed!
