A traditional Greek soup with Avgolemono, lemony and full of goodness!
The Avgolemono makes this soup so different! Youvarlakia!
A great soup as a main or a starter, a soup loved by my guests!
Here is what you will need!

500 gr. (1 lb) minced beef (lean)
1 cup rice (Arborio)
1 large onion-grated
3 eggs
1/4 cup fresh mint, chopped or 1 tbs dry
1/4 cup olive oil
Salt and pepper according to your taste
Flour for coating
2 potatoes diced
For the soup
8 cups of water
1/2 cup olive oil
4 tbs chicken or beef base
Juice of 2 small lemons
Here is how to make Youvarlakia!
In a bowl, mix together, meat, rice, onion, mint, oil,1 egg, salt, and pepper.
Form mixture in small, bite-size balls and roll in flour.
Boil the water with the oil, potatoes,
and base, salt and pepper. When boiling,
Place meatballs gently in hot water and cook meatballs in low to medium heat for 30 minutes.
When done, remove from heat and let cool for 5 minutes!
Avgolemono: In a bowl, beat the 2 remaining eggs, until soft picks form and start adding the lemon juice with a 1/2 cup liquid from the soup, continue beating another minute, and then pour the Avgolemono in the soup!
Your soup is ready, no boiling from this point, just add a little pepper on your plated soup and you are good to go!
