Carrot salad Litsa!

Here is a carrot salad I love,

I love salads but sometimes I get stuck in the salad department, I get to that place where I repeat recipes often. Carrot Salad to the rescue!

Thank god I realize it and snap out of it…I need a variety in my cooking and of course, we have no shortage of ingredients to start playing and having fun.

This carrot salad is a colorful salad very pleasant to the eye, delicious and healthy at the same time. We all know how very precious carrots are to our health, and the more raw vegetables we enjoy the better.

You will need

10 shredded carrots

3 tbsp flat leaf parsley

1 small onion chopped

½ cup raisins or pomegranates

½ cup slivered almonds toasted

For the dressing

¼ cup olive oil

3 tbsp lemon juice

1 tbsp mustard

1 tbsp mayonnaise

1 tsp salt

½ tsp sugar

Prepare your salad and refrigerate for a few hours for best results.

Litsa’s tip: If your raisins are dry don’t despair, just place them in hot water for a few minutes and they will be nice and plump in no time.

Dry them and use them in your salad!
