I also believe that the simple recipes will remain our favorite ones and they will be adopted, just like this Greek Butter chicken recipe. They are so easy to make and they need ingredients that we have available in our pantry.
Here is what you will need:
- 4 chicken legs cut in 2 all visible fat removed
- 4 tbsp good quality salted butter (no margarine)
- 3 cloves garlic smashed
- ½ cup white wine
- 1 cup chicken stock
- ½ lemons the juice
- ½ cup cream
- Salt and pepper to taste, smoked paprika and a little dry oregano
Here is what to do
Place butter in an ovenproof heavy pan to melt
Add the chicken skin down and sauté until nice and golden
Turn on the other side and do the same
Remove chicken and place on a plate, add the garlic in the pan and cook for a minute or 2
Deglaze with the wine and scrape the pan well with a wooden spoon so you can release all the goodness, add the rest of the ingredients and cook for a few minutes to reduce the sauce a little.
Add the chicken and roast in a preheated oven for 30 minutes at 350.
