Have I told you how much I like eggplants? I am always looking for ways to cook eggplants!And this is my eggplant delight!
And when I can’t find a recipe I like, I create my own, and here is a recipe I came up with.
I served the eggplant delight as an appetizer and it was loved, for sure a keeper.
I have so much fun when I am ready with the ingredients and I can play and experiment, and if I like the end result I am so happy!
But the joy comes when the people in my life like it, sometimes it is so hard to please them, after all, they are used to excellent cooking almost every day and they take things for granted, so when thumbs go up I know the recipe is a keeper…
Eggplant is a vegetable, very healthy, do not be afraid to use it in your cooking!

Here is my recipe for Eggplant Delight
1 large eggplant sliced
5 large potatoes sliced
Tomato sauce ready, with basil
Salt, pepper, garlic salt
Vegetable oil for frying
¼ cup grated parmesan cheese
Grated Friulano cheese
Here is how to make Eggplant Delight
Slice eggplants and potatoes in ¼ of inch slices
Season well with salt pepper and garlic salt
Lightly fry eggplant and potato slices in hot oil
Put 2 tbsp or tomato salsa at the bottom of the individual ramekins and start layering, a layer of potato, a little salsa, eggplant a little salsa, and finish with potato.
Sprinkle a little parmesan cheese and add a generous amount of grated Friulano cheese.
Bake in a hot oven for 15 minutes or until cheese has melted to a nice golden color!
