Here is a recipe I love and make quite often, we like Okra the Greek way and it’s perfect for a meatless day.

wonderful vegetable but so misunderstood by many, try this recipe that uses Frozen Okra and you might change your mind.

Of course, you can use fresh Okra when available!

You might end liking Okra the Greek way!

Its one of the meals that we call (LATHERO) because it is meatless and we use more olive oil in cooking Okra.

We make it with chicken in the oven and it is just as good!

The same elements just add the chicken and roast for 1 hour in 350.

 

 

You will need,

Okra 2 pouches frozen

2 large onions sliced

2 cloves garlic

½ cup olive oil

1 cup prepared tomato sauce the one with the vegetables

I cup plain tomato juice

Water to almost cover the Okra

¼ cup apple cider vinegar

Salt, pepper and a pinch of sugar

Here is how

In a pan Sauté the onions and garlic with the oil for a few minutes

Add the potatoes and continue for a few more minutes

Add the frozen Okra, the rest of the ingredients and cook on medium heat for 20 minutes or until your Okra is done to the touch but not mousy.

So very healthy Okra is, such a beautiful vegetable, I remember when I was very young I visited a farm and I thought how nice a little plant with earrings! Oh well, I was really young!

P.S. Don’t overcook Okra.
