Youvetsi! Casserole with leftover BBQ chicken!
Ah, that Orzo comes to the rescue and helps the leftover chicken, to become a star.
Never give up the lesson for today, never, never, no matter what!
Leftover chicken, bones, and skin removed and cut in bite-size pieces!
1/4 cup olive oil
One onion diced
One clove garlic
1/2 cup red or white wine
4 tbsp crushed tomato
1 cup Orzo %100 Semolina
3 cups chicken broth
Salt, pepper,1/2 tsp sugar, red pepper flakes, one cinnamon stick, and mint leaves!
Here is how!
In a heavy pan, add the oil and saute for a moment the onion and garlic.
Add the Orzo and continue for a few more mins, stirring, making sure the Orzo is covered in oil!
Deglaze with the wine, add the rest of the ingredients, and cook for 10 minutes!
Remove from heat and let rest for a few mins.
Serve with grated cheese!
