Spetsofai is a delicious Meze from Pillion, a mountainous region of Greece.
It’s very confusing, Spetses is an island and this recipe is named after the island of Spetses, but the origin of the recipe is from the mountains of Pillion. Figure it out
In any case, I love this recipe and is one of my favorite sausage recipes.
Very colorful indeed, peppers in all the colors enhance the appearance of this great Meze!
Great as a Maine with rice or homemade French fries, or a perfect meze with nice red wine….And good bread….
You will need for your Spetsofai,
4 large peppers (1 red I yellow, 1 orange, 1 green}
- Ingredients
- 4 large peppers (1 red I yellow, 1 orange, 1 green}
- 3 sausages (I like hot and spicy Italian sausages)
- ¼ cup olive oil
- 3 onions
- 1 clove garlic
- ½ cup wine
- 1 cup tomato juice
- Salt and pepper to taste
- ½ tsp sugar
- ½ tsp oregano
- Red pepper flakes to your liking
Here is how you make Spetsofai
Cut sausages into 2-inch pieces
Wash and cut the peppers into nice chunks
Slice the onions
In a heavy frying pan, put the oil and sausage to cook for a few minutes
Add the onions and garlic and sauté for a little longer
Add all the peppers and continue until the vegetables are soft but not overdone
Deglaze with the wine, add the tomato juice and spices and cook for 10 minutes on high heat.
Taste, always taste and adjust the seasonings
Your Spetsofai is ready and of course delicious!
PS Black olives are optional.
