Grilled vegetable salad with a touch of Feta!

Here is why I love vegetables; they are here to make you happy and keep you in good health, especially grilled vegetables!

Growing up, I never liked vegetables, and one reason was that Greek people kill their greens by overcooking them!

My father, for instance, liked his zucchini steamed with olive oil and lemon dressing. I hated zucchini this way, Please…..

But as you grow up and you realize that all the vegetables have something your body needs, you start to find ways to cook them so that you can fall in love with them.

Grilled vegetables are so delicious and not overcooked. Try this salad, and I am confident you will learn to love your grilled vegetables too! This is just a sample salad, you can add the vegetables of your choice!

Healthy Greek Food

  • Ingredients
  • One large eggplant sliced
  • Two zucchini sliced about 1 inch
  • One large red pepper cut in 2 and seeded
  • One large onion sliced
  • olive oil
  • Salt pepper a touch of sugar, and oregano!

Place all vegetables in a large bowl season with salt, pepper, sugar, and add a little olive oil. Mix well so that the vegetables are coated with oil. BBQ a few minutes on each side on medium heat.

Make a nice vinaigrette with olive oil, balsamic vinegar, a little sugar, and a touch of dry oregano.

Place your grilled vegetables in a beautiful platter and add the vinaigrette. Finish with feta crumbs, and you have a fantastic summer salad.
