A wonderfully delicious soup, with such healthy ingredients, so good on a freezing day!
My suggestion make it hot and spicy by adding some red pepper flakes! I love chickpeas!
This is a delicious way to enjoy them!
Lemony chickpeas with pasta and spinach!
1/2 cup olive oil
1 can chickpeas(rinsed and drained)
1large onion cubed
Two cloves garlic
5 sprigs of dill!
10 mushrooms diced
1 lemon the juice
1 cup pasta Tubetti or any small pasta
2 cus frozen spinach
3 cups chicken broth
3 cups of water
Salt and pepper to taste!
In a pan, add the oil and saute the onion, garlic dill, and mushrooms for a few minutes.
Add the chickpeas and continue a few more minutes, now add the broth and water and simmer for 10 minutes.
At this point, add the pasta, spinach and lemon juice, salt, and pepper!
Continue cooking until the pasta is cooked, another 8 minutes! Taste and adjust the flavor according to your liking!
P.S. If you like, you can add sausage or bacon when you saute the onion for more intense flavor!
