Greek spinach rolls by Litsa!
  • Here is what you will need!
  • 1 kg (2 lbs) fresh spinach
  • 2 bunches spring onions, chopped
  • 1 leek finely cut
  • 1 bunch dill, chopped
  • 2 cups Feta cheese, crumbled
  • 1/2 cup olive oil
  • Pepper a touch of salt and 2 tbsp flour
  • 25–30 Phyllo pastry sheets
  • ½ cup oil for brushing it can be vegetable oil

Ah, the love affair of the Greek people!Spanakopita or spinach rolls are an affair that stands the test of time!Spinach and Greek Feta cheese will do it all the time, deliciousness!The Phyllo makes all the difference, but whether traditional or commercial, go the extra mile and make some spinach rolls, they are easy to make, they freeze well and they are excellent as finger food! Also what a nice way for the young ones to have some spinach!

Here is what to do!

Wash spinach thoroughly.

Chop, add a dash of salt and squeeze all the juice out by rubbing it together.

Place in a bowl and add remaining ingredients and mix very well.

Cut each Phyllo sheet in 2 and fold in half.

Place 1 tbsp of mixture on one side, fold sides in, oil Phyllo and roll.

Bake 10-12 minutes at 350 until  golden.

Excellent finger food.Always make more Spinach rolls, they are loved and they disappear fast!

Litsa’s Tip

Spinach rolls freeze well unbaked. Just store in airtight container, separating layers of rolls with wax paper.

No need to thaw before baking.
