Shrimp Chowder

Shrimp Chowder by Litsa!

Shrimp Chowder, a soup that hits the spot on a very cold day!Recipe for two!

Easy to make and so delicious, please double the recipe if you want for more than 2 people!

 I love New England for many reasons but the lobster and the chowder are my favorite meals to have when I visit that beautiful part of the US.

I only wish the water of the Atlantic ocean was warmer so we could enjoy swimming, but no, not for me, way too cold!

Here is how I make my Shrimp Chowder and I love it!

You will need,

15 shrimp

2 large potatoes diced

1 large onion diced

1 clove garlic chopped

4 slices bacon cut in small pieces

1 tbs butter

2 tbs oil

1 can corn

2 cups chicken broth, vegetable broth or water

½ cup white wine

1 cup cream

1 cup water

1 tbs flour

Salt, pepper, dry thyme and a few red pepper flakes

Here is how to make the shrimp chowder by Litsa!

In a pan put the oil butter, bacon and cook for a few minutes

Add the onion and garlic and sauté until onion is nice and transparent

Deglaze with the wine, cook for a few minutes.

Add the potatoes, corn and chicken broth, cook for about 10 minutes until potatoes are done, over medium heat.

At this point add the shrimp and cook for about 3 minutes.

Season with salt, pepper, dry thyme and red pepper flakes.

Add the cream.

In the cup of water dilute the flour and add to the Shrimp Chowder.

Cook for a few more minutes or until the soup is nice and thick!

Try and adjust seasonings.

Your Shrimp Chowder is ready and it is delicious!

 

 

Cauliflower-potato soup Litsa

A very delicious soup, easy to make, nice and thick and so filling!Cauliflower-potato soup!

When cauliflower is available, try to cook with it, because it’s very healthy.So many ways to cook Cauliflower and making a hot Cauliflower and potato soup is the answer for a cold day!

Seasonal cooking is the best, and you don’t have any bad feelings as to what you are eating!

Control is of the essence, get the control and eat healthy, for the life of me, I don’t understand how we trust people in the food industry so much! 

Why do we eat with so much ease everything they offer us! We take better care of our car than we do with our bodies, as you can see I am very passionate about the subject!

Ah, the pleasure of cooking and baking our own food, the peace of mind and satisfaction!It is work, I give you that, to decide what to cook, to get to the market, to bring everything home, cook and clean up, yes I know you are tired, especially if you work full time!

But stop and think, for just one moment, nothing worthwhile is accomplished with no effort!

Here is my delicious cauliflower and potato soup!

 

You will need:

1 beautiful head of cauliflower cut in pieces

2 big onions sliced

4 celery stalks cut up

¼ cup olive oil

1 cup tomato sauce

2 cups chicken broth

Salt, pepper, garlic salt, and ½ Tsp sugar

4 cups water

1 cup cream

Here is how to make my cauliflower and potato soup!

In a heavy cooking pot add the oil and the onions.

Sauté for a few minutes just to sweat the onions

Add the rest of the vegetables and continue a little bit longer.

Now add the wet ingredients, except the cream.

Season the soup and let simmer on medium heat for 30 minutes.

At this point, if the soup needs a little more water add some more!

Just before it’s done add the cream, cook just a couple of minutes more and you are ready to puree your soup using a hand blender, you need to have a nice creamy consistency!

Your cauliflower and potato soup is ready!

 

 

 

 

 

Onion Soup-Litsa!

I  like my Onion soup made with a little wine!

On a wintery, snowy day I crave Onion soup, not any kind of Onion soup but the real deal, made from scratch the way I like it with a little red wine and croutons.

 Here is my recipe, easy and please try and make it you will be so happy you did!

Sometimes we think that a recipe we love is so hard to make and we never even try to make it!

This is so wrong!

It will take a little effort I know but imagine after a couple of times you will be able to master your favorite recipe!

You will be so happy!

You will have the control and because you like it you will make it more often and of course, you will make the necessary adjustments and the recipe will be your own!

You will feel proud!

 Litsa’s Onion soup from scratch!

You will need

4 large onions sliced

2 garlic cloves smashed

3 tbsp butter

2 tbsp olive oil (just because I’m Greek)

3 fresh sprigs of thyme (you can use dry if fresh is not available)

2 bay leafs

1 cup red wine

3 tbsp flour

3 cups beef broth

2 cups water

Salt and pepper to taste

Croutons and cheese like smoked Gouda, Swiss, or Havarti

Here is how

Place butter and oil in a heavy pot, add onions and garlic

Sauté onions until nice and golden

Add wine and let cook for 2 minutes

Incorporate all the ingredients and let the soup simmer for 20 minutes

When Onion soup is done remove and discard bay leaf

Place ramekins in a large baking pan

Fill ramekins with soup

Add croutons and cheese and broil for a few minutes or until cheese melts and it has a golden color!

Voila! The famous French Onion soup is ready!

The national soup of Greece

Fasolada or as the Greek people call their national treasure, Fasoulada.The Greek bean soup that helped Greek people make it through difficult economic periods, like the German occupation and now.

Dry white beans, navy beans, simmered with healthy vegetables is an ideal vegetarian recipe and when you add the olive oil it becomes super healthy. Nice heavy bread makes this a very satisfying winter meal. Olives and feta cheese compliment this dish.
