Salmon on a bed of onions
Simple and delicious
2 fillet of salmon
3 onions thinly sliced
3 garlic cloves sliced
3 tbsp olive oil
2 tbsp. lemon juice
1 tbsp capers
Salt and lemon pepper to taste
In an ovenproof pan place the onions and garlic, season lightly with salt and lemon pepper.
Place the fish skin down on top of onions.
Mix oil and lemon well and pour over fish.
Season fish with salt and lemon pepper.
Add the capers.
Bake in hot oven for 20-25 min. at 375.
I love to make a sauce with the same elements and pour a little over the baked fish
Just before serving.
Do not overcook, you want salmon to be medium rare, if it overcooks it becomes dry.
You don’t need to turn fish over.
The sweetness of the onions complements the fish and it doesn’t stick on the pan.
The only thing you need is a colorful salad and your meal is complete.
