Potatoes, chickpeas, and spinach!

Dill is the herb of my choice for this recipe!

OH, life is good, when you can have something so delicious with no effort!

Go ahead and make this recipe you will love it with some nice bread and a glass of wine!

½ cup olive oil

4 Potatoes diced

1 large onion diced

½ bunch dill

1 can chickpeas drained and rinsed

1 bunch fresh spinach

Salt pepper and a touch of garlic powder

1 cup prepared tomato sauce

1 cup water

Here is how!

In a pan add the oil and onion and sauté for a few minutes, add the potatoes and continue cooking a little more stirring the potatoes so they don’t stick to the bottom of the pan.

Add the water and the tomato sauce, salt pepper, and garlic salt!

Cook potatoes in medium heat for about 8-10 minutes,

At this point add the chickpeas

 and spinach, add a little more water if needed, and lower the heat and cook until spinach is ready and to your likening.

Plate the food and just before serving add a little good olive oil!

Fresh olive oil is the very best thing you can add to this dish!
