Pork roast with potatoes

2 lbs pork for roast
4-5 garlic cloves
1 tbsp garlic powder
½ cup olive oil
¼ cup apple cider vinegar
2 tbsp prepared mustard
10 potatoes cut in thick wedges
Salt and pepper to taste
1 ½ cups water
Season meat very well with salt, pepper and garlic powder. 
Place in deep pan and broil to give it color and seal the juices.
In a bowl combine your potatoes and rest of the ingredients except water and mix well with your hands.
Place potatoes all around meat add the water cover and cook.
Optional
3-4 dry figs to compliment your roast but no more than that it becomes very sweet.
A nice green salad goes well with this meal.
