Phyllo Nests with spicy chicken is easy to make and they are so delicious!
A very original recipe! You don’t know what to do with leftover rotisserie chicken here is your solution!
The recipe is small. You can double it if you like.

- 1 cup cooked chicken diced
- 3 tbsp olive oil
- tbsp butter (not salted)
- 1 clove garlic chopped
- 1 small onion chopped
- 5 mushrooms diced
- 1/4 cup pistachios
- 3 tbsp soy sauce
- 2 tbsp Ketchup
- 1 tsp honey
- Pepper and a little salt
Prepare the chicken filling
In a heavy frying pan add the oil and butter
Add onion, garlic, and pistachios, sauté for a few minutes, add mushrooms and continue for another 2 minutes.
Add the chicken and cook for another 3 minutes.
Add the rest of the ingredients and cook a little longer stirring the mixture well together.
Taste your filling and adjust seasonings
Let cool and spoon mixture into your prepared Phyllo nests.
They are very easy and actually pleasing to the eye, very original.
To make the Phyllo Nests
For the nest’s you will need 2 Phyllo squares to fit a muffin cup.
Butter each phyllo and cut squares, fit in the muffin cup and repeat with the second phyllo square.
Bake for 10 minutes in medium heat or 325, remove and let cool.
Your Phyllo nests with spicy chicken are ready to be enjoyed!
