Using Honey and nuts to create the perfect candy we call Pasteli.This is a timeless recipe and there aren’t any guilty feelings when we offer this candy to our children.Using all natural elements we never go wrong…Healthy, crunchy, delicious!
- Olive oil, for greasing the baking sheet
- 11/2 cups hulled sesame seeds roasted
- 11/2 cups almonds roasted and crushed
- ¾ cup Greek thyme honey
- ¾ cup sugar
- Unrefined sea salt to taste
- 1 tsp lemon juice
Generously grease a baking sheet with olive oil and set aside.
In a heavy pot add the honey and sugar and bring to boil.
Boil for a few minutes. Add the lemon juice.
Add the nuts to the honey mixture and continue cooking stirring with a wooden spoon for another 2 minutes.
Add a generous dash of unrefined sea salt into the honey and stir until the mixture stiffens.
Pour the mixture of honey almond and sesame seeds onto your greased baking sheet pat down and smooth out the mixture with a wooden spoon or place a clear plastic on top of the hot mixture and roll to flatten with a rolling pin.
Score the Pasteli into pieces of 1/4-inch by 1-inch and set the pan aside until the candy is cool enough to handle comfortably.
When cool to the touch, but still warm enough to be malleable, grease your fingers with olive oil and roll the pieces of honey candy into small, round logs.
Allow to cool completely before serving.
