Newsletter, June 2009, news from Litsa " Summer food and the living is easy."
I can’t pretend that it does not bother me that the Greek Islands are not in my plans for the summer!
Life in the Islands is something I can’t explain with words, the only thing I can say is another summer without the sun, the sea and the wonderful flavors, how in the world will I make it?!
The experience of having Ouzaki in a small taverna by the sea with so many different mezedakia cannot be explained in words, it is simply dreamy.
At the same time I think of the millions of Tourists that will visit my favorite spots and I want to scream “please take good care of my beloved place. Do not destroy my heritage”.
For the rest of us that will stay home, we have to make the best of it and enjoy our summer in our cities with our BBQ.
One thing that concerns me when it comes time for the BBQ is that we concentrate more on protein and less on salads and vegetables. It’s very sad because the local markets are bursting with wonderful produce and the varieties are immense. I am very fortunate to have a local farm close by with all kinds of seasonal vegetables that I can harvest myself. I love to go every week and pick them. It gives me a chance to touch base with nature.
I love to grill vegetables like eggplant, colorful peppers, zucchini, onions, and place them in a platter. Make a nice vinegrate with olive oil, balsamic vinegar, oregano and crumbled feta and you have something so easy and at the same time so tasty.
Along with the grilled vegetables I make some nice burgers and here is my favorite recipe.
Litsa!
