Grilled vegetable salad
1 large eggplant sliced
2 zucchini sliced about 1 inch
1 large red pepper cut in 2 and seeded
1 large onion sliced
Place all vegetables in a large bowl salt pepper and add a little olive oil.
Mix well so that the vegetables are coated with oil.
BBQ a few minutes on each side on medium heat.
Make a nice vinegrate, with olive oil, balsamic vinegar and a little dry
oregano.
Place your vegetables in a nice platter and add the vinegrate.
Finish with feta crumbs and you have an amazing summer salad.
