Green Bean Salad
1 pound fresh green beans
1 onion sliced
1/2 red pepper diced
3 tbsp.olive oil
1/4 cup walnuts
2 tbsp balsamic vinegar
1 tbsp sugar
Salt and pepper to taste
Clean beans and cut in 3.
Boil in salted water for 6-7 min. Strain and run cold water over them to stop the cooking prosses and maintain a nice green color.
In a heavy skillet add oil and saute onion,red pepper and walnuts on slow heat for 5 min.just until transparent not brown. Add balsamic vinegar,sugar and season with salt and pepper.
Remove from heat and pour on green beans, mix well and your salad is ready.
Excellent side dish as well,goes well with Pork chops,roasted chicken and more.
Green beans have a natural sweetness and this dressing complements the original flavor.
