Eggplants with onions and peppers, if you like eggplants you will love this recipe!
Not too many people like eggplant, I, on the other hand, love them and always look for new ways to enjoy them!
Here is a recipe I love, a delicious melange of peppers and onions top the eggplant, together they make wonderful music!
- 8 small Italian eggplants
- 3 large onions
- 4 large peppers
- 1 cup prepared tomato sauce
- ½ cup water
- Salt, pepper, oregano and ½ tsp sugar
- Vegetable oil for frying
Wash and dry the eggplant
Cut in half lengthwise
Lightly fry the eggplants on both sides and place in an ovenproof pan
Dice onions and peppers and sauté in a little oil, place on top of eggplants
Mix tomato sauce with the water and pour on top of the eggplants
Bake in a preheated oven at 350 for 20 minutes.
Options: You can use a mélange of peppers, also you can add some feta cheese if you like!
