Tiropita with Feta cheese

Street food, snack, meze or something to enjoy at any moment is Tiropita!

A very delicious cheese pie, made with Feta cheese and eggs, something between a pie and a Soufflé!

Warm or cold, with coffee, tea, beer or wine it is absolutely delicious!

Every country has their own street food!

When in a different country make it a point to have the street food of the area, paying special attention to the way the food is prepared and how clean everything is! Also look at the person behind the cart, and their hands, how does it feel, inviting, you get a good feeling, then go ahead and have some, otherwise do not play with your vacation time!

Don’t go with the logic that heat kills all and it is just fine!

This is a very important detail if you don’t want to get sick!

Ask many questions and never assume!

I remember in one of our vacations to Colombia I was ready to get a piece from a cluster hanging from a tree thinking it was cheese, thank god someone asked me if I knew what that was, I said cheese and he said with a smile, Iguana eggs!

Needless to say, I went no further!

In Greece, they have so many to choose from, but the most famous and delicious is the Souvlaki!

Delicious lamb or pork and chicken chunks, marinated in all the amazing herbs and spices of the region and roasted in charcoal, make the best street food!

Tiropita, spanakopita, koulouri with Sesame and so much more are available and it is clean food! Delicious food and very inexpensive!

Brie by Litsa!

This is an amazing appetizer if you like Brie!

I love Brie and when I make it this way it is a hit all the time.Even if you don’t fancy this French cheese, I can assure you, you will love it!First of all, it is a conversation piece, and after the looks, the taste is fabulous.

When the cheese melts and it combines with the rest of the ingredients it’s like something wonderful happens!

The perfect bread to enjoy this delicacy is a baguette, Have it ready to Be enjoyed with the delicious soft cheese!

A very special recipe done with love will be remembered for a long time!

Brie in Phyllo

Here is what you will need,

1 Brie

2 tbsp butter and a little olive oil

2 onions sliced

1 clove garlic

½ cup walnuts

2 tbsp good balsamic vinegar

¼ cup maple syrup

2 tbsp Apricot preserves

Salt and pepper to tasteimg_5965

6 Phyllo sheets

Melted butter for the Phyllo

Here is what to do

In a heavy skillet add butter and olive oil

Sauté the onions and garlic until transparent, for a few minutes

Add the rest of the ingredients and cook a few more minutes

Remove from heat

Butter an ovenproof plate and start layering the Phyllo

Make sure you butter in between each Phyllo

Place the brie on the Phyllo and add the onion mixture on top of the cheese

Cover with the Phyllo, butter well and bake at 350 until nice and golden, about 25-30 minutes

Serve hot with baguette slices, perfection!

Divine shrimp with Feta!

Divine shrimp with herbs and Feta
Dill and Feta make this recipe irresistible. 

Amazing taste! Shrimp is easy to cook and always appreciated by many!

Great for Bruschetta or a salad topping also for a nice wrap and tacos, or just like that because you like seafood!

A good white wine like a chardonnay will go very well with this appetizer.

  And when I can’t find a recipe I like, I create my own, and here is a recipe I came up with.

I served the eggplant delight as an appetizer and it was loved, for sure a keeper.

I have so much fun when I am ready with the ingredients and I can play and experiment, and if I like the end result I am so happy! But the joy comes when the people in my life like

But the joy comes when the people in my life like it, sometimes it is so hard to please them, after all, they are used to excellent cooking almost every day and they take things for granted, so when thumbs go up I know the recipe is a keeper….Eggplant is a vegetable, very healthy, do not be afraid to use it in your cooking!
