have to have something to calm it down!

Not too many ingredients and you can play with the flavors so it can make you happy.

You can use orange zest, lemon zest, vanilla,mastiha, the only thing you have to remember is that it has to compliment the main ingredient, the oil!

It can be done in 15 minutes and it doesn’t require any baking, fast and delicious!

Here is what you will need,

2 cups sugar

1 cup Semolina,medium size

1 cup Semolina, regular size

1 cup vegetable oil

41/2 cups hot water

The zest of 1 lemon

1 cup almonds, blanched, roasted and chopped

Cinnamon for dusting

Here is what to do

In a pan heat the oil and saute the almonds for a few minutes, When light brown add the Semolina and saute until golden.

Dissolve sugar in the hot water and have available.

Remove Halva mixture from the heat and add the hot water in the Semolina, very carefully because the mixture tends to bubble and it can burn you!Stir until all liquid is absorbed and you have a thick mixture! Place the mixture in a cake mold.

Let it rest for about 5-6 minutes and turn your Halva with Semolina on a nice platter.

Dust with cinnamon and it is ready.

You can serve with a dollop of whipped cream!(Optional)

A  traditional Greek recipe, totally inexpensive and a recipe that makes people happy!

great with a cup of coffee or tea! I also like it with ice cream!

I had a problem with it in the past! I never liked the strong flavor of baking soda used.I would never make it just because of that. 

Well if you don’t like something and you can do something about it, just go ahead and make the change! 

 Replacing the soda with baking powder and a touch of baking soda works so much better for me!  

Now I don’t feel the strong scent of the soda and I like Karidopita again.

You can serve it with ice cream or a dollop of whipped cream and it’s delicious.

Here is what you will need for the amazing Karidopita,

1½ cups flour

2 tbsp Semolina

½ cup sugar

5 eggs

½ tsp cinnamon

½ tsp cloves

¼ cup brandy

½ cup oil

Juice of 1/2 lemon

½ tsp soda

½ tsp baking powder

½ cup milk

1 cup walnuts


For the syrup

1½ cups water

1 cup sugar

1 tbsp honey

1 tbsp of lemon juice

1 cinnamon stick

Boil all ingredients together for 6-7 min. Let cool for a few min and add slowly over the cool karidopita.

Here is how to make the cake

With your mixer beat egg whites until nice and thick,

 In another bowl beat together the egg yolks and sugar, beat for about 10 min or until nice and fluffy. To this mixture we add slowly the oil with the juice of the lemon, slowly adding the milk, dissolve the soda in the brandy and add to the mixture.

 Add the dry ingredients, and last we add the egg whites by folding them gently into the mixture with a spatula!

Bake the Karidopita in a preheated oven at 350 for about 40-45 min. Just remember to score the Karidopita and always add warm syrup to cool cake slowly, not all at once, the cake will become muddy if we are not careful. Give it time to absorb all the syrup!

Brownies Litsa

Here is an easy recipe for Brownies.Why I love them because they are delicious,totally uncomplicated and you can serve them with ice cream!

Also, I love chocolate and these Brownies are chocolate,they don’t have chocolate ,they are chocolate!

Just make sure the cocoa is of a very good quality,the one for baking not the one for chocolate milk…

The American dessert that has become famous all over the world!

Here is what you will need for the very best Brownies!

1/2 cup cocoa

1/2 cup butter (room temperature)

1 cup sugar

1/4 cup flour

1 cup walnuts( roasted and crushed )

2 eggs

Vanilla a little chocolate liqueur and a pinch of salt

Here is how to make Brownies

With the rack in the middle position, preheat oven to 350

line an 8-inch square pan with parchment paper

Place all dry ingredients in a bowl and sift them

Beat butter and sugar for a few minutes

Add the eggs and continue a few more minutes

At this point add the dry ingredients and vanilla, liqueur and salt

Mix well

Bake for 30-35 minutes or until toothpick comes out clean

And you have perfection! Brownies made by your lovely hands!

A dessert with no chemicals and preservatives,

Something that you can serve the kids with no guilt! 

Only when we make something at home, only then we are sure of what our children are eating.

Healthy food, no additives and all kinds of preservatives that are so harmful in the long run!

Easy to make and it can last with no refrigeration for a few days.

I mean how can you go wrong with Phyllo, nuts, and honey…It’s a marriage made in heaven, and that is why it has staying power…

Ok, I agree that Phyllo is very capricious, but you take the control and you be the boss, make sure you have all your ingredients ready and waiting, and work fast because Phyllo likes to dry up and when that happens it crumbles and you can’t work with it…
